Mini-Chocolate Line
February 28th, 2007 | by Loretta |Since I still fantasize about being Chef Torrés’ sous chef, I practice and study chocolate in my spare time. As a final project for something I involved myself in at school, I decided to express myself through chocolate (um, yeah I watch Food Network competitions a lot…)
Aside from being super tasty, chocolate as well as other ingredients are very useful in creative expression. Really. How do you think those chefs do it with abstract interpretation of their medium and crazy showpieces that weight dozen upon dozen of pounds?
So, I got artsy and did little sketches in my journal to plan this craziness. Many man-hours later, finito– I had a little chocolate something-something to represent every week of the series of workshops we had.


Waffle pretzels dipped in white chocolate. Just to make sure I can temper chocolate. Tempering chocolate is a must-have skill for anyone who plans on taking chocolate moderately seriously.

The Maslow Marshmallow to represent the famous hierarchy; symbollically, there are multiple steps to make a filled chocolate, and being able to make a top-notch, chocolate boutique worthy one means having a firm foundation on all the basics that come before the final product. Alas, I have much work/practice to do. :’(
In any case, I think makign filled chocolates with a mold might be easier on large scale rather than small. Live and learn.

Then a flavor game: PB truffle base smacked between two layers of crisp dark chocolate and topped with almonds.
Another bark I made was an Oreo bark to represent how ethics can be very clear-cut and distinct at times, but some areas are kinda gray and unclear. Haha.

Finally, my favorite: Coconut Truffle, to represent discrimination and diversity. Face it kids, we discriminate against food; we discriminate people based on what they eat too, sometimes. (Eg., Melanie tells me I look like I’m about to faint whenever I see her with McDonald’s, munching away.) So, a coconut based, enhanced with coconut extract and toasted coconut (my favorite.)
