Scrambling for Breakfast

For whatever reason, there is something occupying my fridge. It’s called emptiness. And while yes, I probably have 9 more unopened jars of Skippy in the house, I’d rather not.

On mornings that I know I will be eating out later at some point in the day, I try to go for something simple. There’s a New Year’s Party at my Dad’s work today. They say if you eat healthy and non-heavy foods in the morning, there is a greater tendency to eat that way for the rest of the day.

What can I make when my resources are rather obviously limited?

Eggs

  • Eggs
  • Toasted English muffin
  • Cheddar cheese
  • Italian herb seasoning

Who needs McDonald’s when a simple breakfast sandwich can be put together at home? The best advice I can offer is that if you are going to scramble eggs, use low or medium heat to avoid having large bubbles and overly denatured proteins. And even with a non-stick pan, it helps to have a quick wipe of oil to help keep it non-stick.
