Do You Know…the Muffin Man?

I wish I had a Muffin Man tell me how much baking powder to use. Yes, I’m very shy about using baking powder, because it can alter the way something should taste.

And alas, such shyness resulted in unleavened muffin. Which was pretty much like a wet, dense cake when fresh from the often. Since cooling, it is nothing more than a very dense, pliable disc. Not a muffin.

They rose maybe 1/16″ of an inch after baking. A generous estimate.

After being cut down the diamter and folded in half, it beared resemblance to a wet, very dense scone.

When stripped naked, the shorties remain standing at approximately 1/2″ in height.

Of course, this is no reason not to give baking muffins from scratch a second try. And perhaps for the second go-around, I should follow a recipe rather than make something up based on theory. :)

No loss, just optimism!
