Cranberries and Coconut

Another morning, another bowl of oatmeal. I’ve had oatmeal every morning this week, as I am quite tired of eating complicated foods…maybe.

Cranberry and coconut oatmeal.

  • Oatmeal
  • Skim milk (!!!)
  • Dried cranberries
  • Coconut flake

This morning, it seemed apparent that there is a general formula to be followed when making oatmeal. Oatmeal can be flavored in so many ways, but adding too much complicates matters. A good rule of thumb to follow seems to be no more than two types of fruit or nuts added and to vary the different types of grains–for instance, oat bran, ground flaxseed and wheat bran– to be added.

Never a dull moment with rolled oats. I have yet to buy Irish steel cut oats. They’re more nutrient dense, but they also take a lot longer to cook. In fact, they require pre-soaking. :(

    do you just make a big pot for yourself? i would look to make oatmeal but i don’t know how to make just one serving. some people say it keeps overnight? love the site by the way.
